Beef Caldereta Mac and Cheese

Ingredients

1   kg   MONTEREY LEAN GROUND BEEF
1   pc   chili pepper (siling labuyo)
3   cups   pineapple juice
1 (50 g)   pc   green bell pepper, chopped
1 (50 g)   pc   red bell pepper, chopped
1 (300 g)   can   stewed tomatoes
1   tbsp   iodized fine salt
1   tbsp   sugar
1   cup   MAGNOLIA NUTRI-OIL
2   tbsp   chopped garlic
1   cup   sweet style tomato sauce
2   tbsp   tomato paste
1/2   can   PUREFOODS LIVER SPREAD
2   tbsp   soy sauce
1/2   kg   macaroni, cooked per package directions
1/2   kg   MAGNOLIA QUICKMELT CHEESE, grated

Procedure

  1. Preheat oven to 350°F.
  2. Boil and reduce the meat with chili pepper, pineapple juice, bell peppers and stewed tomatoes. Season with salt and sugar.
  3. In a separate pan, sauté garlic and onions in oil.  Add tomato sauce, tomato paste, liver spread and soy sauce.
  4. Simmer for 10 minutes over medium heat. Stir occasionally to prevent scorching at the bottom.
  5. Mix meat with sauce and simmer for another 5 minutes or until reduced.
  6. Assemble in this order: Mix macaroni with half of the meat. In a pan, spread half of the macaroni. Layer with cheese. Add a second layer using remaining macaroni. Add the remaining cheese on top.
  7. Bake for 10 to 15 minutes or until the cheese melts.

Makes 5 to 6 servings.
